Sour cheesecake ice cream recipe
I usually made two types of ice cream cheesecake: a Philadelphia-based cheesecake and another with an excellent base that gave it a little acidity.
In this case let’s see the acid-based cheesecake ice cream, ingredients:
- 3300 grams of white base mix (to be requested privately) feel free to use your own but the recipe is optimized on my white base.
- 150 grams of Mec 3 quark base
Blend everything, let it rest for a few minutes and stir.
During the extraction phase you can do it in two ways:
- several layers of tufts, placing berry jam and crumbs/pieces of digestive biscuits between one layer and another.
- flatten it completely and embellish it with a layer of strawberry ice cream placed in a mold (see the photo below) or berry ice cream
