Mandarin ice cream recipe

A frozen sorbet ice crem with fresh mandarins is a phenomenal thing.
I advise you to carefully select mandarins that are of ITALIAN origin and that when brought to your nose they already release their typical smell.
Ingredients:
– 2000 grams of mandarin juice squeezed with your own hands
– 950 grams of water
– 450 grams sugar
– 300 grams of super DBF super tuttovegetale base from Aromitalia (for a better effect you would need 150 grams of DBF base and 150 grams of Aromitalia cocktail base)
– 250 grams of dextrose
– 50 grams of glucose 30 De

Squeeze the mandarins (it takes effort but the result is worth it)
Blend everything and mix! Remove and place in the blast chiller, then decorate with mandarin segments from which you have removed the skin
Mandarin ice cream will give you a lot of satisfaction!
