Ice cream Recipe: White chocolate with pistachio

An exquisite white chocolate and pistachio ice cream born from the perfect fusion of white chocolate and pistachio.

Here are the ingredients:

  • 5500 grams  of white base mix (to be requested privately) feel free to use yours but the recipe is optimized on my white base.
  • 500 grams of white chocolate chips
  • 125 grams of pistachio paste
  • 6 grams of pistachio
  • chopped pistachios to taste

Blend the white base mixture and the pistachio paste together, then heat to 55 degrees, adding the chocolate chips.
Once it reaches 55 degrees, whisk the mixture and almost when the ice cream is ready, add chopped pistachios to taste, giving your ice cream a 3D porcelain taste.
Extract it with nice tufts or use the Pavoni chocolate cube mold.
Decorate if you make tufts with chopped pistachios and white chocolate.
