Catalana (Creme brulèe) ice cream recipe

Catalan cream ice cream or creme brulèe is a flavor that cannot be missing from your ice cream shops:
Easy to prepare even if a little long to embellish it will give you a lot of satisfaction and amazement among your customers.

Here are the ingredients to prepare a delicious Catalan cream ice cream:

  • 5500 grams of white base mix (to be requested privately) feel free to use your own but the recipe is optimized on my white base.
  • 125 grams of Catalan pasta from Aromitalia
  • 125 grams of cream to balance the Catalan pasta of Aromitalia

Blend everything and mix. Take out the Creme brulèe ice cream, flatten it all in the tray and put it in the blast chiller until the surface is nice and hard.
To embellish it you will have to do it in many steps… start by putting some sugar on the two ends and melt it with the gas kitchen torch, then put it back in the blast chiller and slowly, line after line, step after step go towards the center.

Once everything has been caramelised, put it in the negative cupboard until the temperature rises to -13 and put it in the display case.
