Cream: ice cream recipe

Do you like the cream flavor and don’t know how to make it at home? Here I am with a tasty recipe!

The ingredients are:

  • 650 grams whole milk
  • 100 grams of cream
  • 150 grams sugar
  • 100 grams of egg yolks

Theory dictates that pasteurized egg yolks be used, but practice dictates that fresh yolks from farmer’s chickens be used.
Out of necessity I must tell you that in the ice cream shop we bring them to 85 degrees by pasteurizing the mixture in order to remove any problems with the eggs.
At home, however, the music changes and I use fresh eggs from my hens without pasteurizing them.
Now that you know that to be safe they must be pasteurized, take all the ingredients, blend them by melting the sugar and then put them in your ice cream maker.
As soon as it is ready you will enjoy an excellent ice cream with the flavor of egg yolk.
Other variations heat the mixture and add orange zest or vanilla (everyone then makes their own special recipe depending on their own palate).
