Ice cream: Cantucci and Vin Santo Recipe
Why eat only Cantucci and Vin Santo when we can make them ice cream?
Let’s start by getting some excellent Vin Santo and Cantucci, possibly made by your trusted pastry chef/baker.
Ingredients:
– 557 grams whole milk
– 105 grams sucrose
– 60 grams dextrose
– 40 Grams Glucose 30 De
– 23 grams powdered milk
– 5 grams neutral 5
– 86 grams cream
– 95 grams egg yolk
– 22 grams Vin Santo
– 60 grams cantucci
To embellish it, add other nooks to taste
Take all the ingredients (except the cantucci and the vin santo) and blend them together and pasteurize.
Take the pasteurized mixture, add the Cantucci and Vinsanto and blend again then stir.
Separately, take some Cantucci and crumble them into powder and leave slightly larger pieces to add to the almost ready ice cream.
Remove and make two layers, placing crumbled cantucci on the surface, embellish with cantucci.
