Ice Cream: CioccoAmarena Recipe

CioccoAmarena ice cream blends the delicious aroma of chocolate with Cantiano black cherries.
The recipe for CioccoAmarena is very easy but you need the right ingredients!I
Start getting real Cantiano black cherries from Morelloaustera (contact them on my behalf) and not the fake or too sweet ones from well-known brands that are good for other things!
Ingredients:

  • 5500 grams of white base mix (to be requested privately) feel free to use yours but the recipe is optimized on my white base.
  • 500 grams cocoa
  • 100 grams sucrose
  • 250 grams dark chocolate chips (Callebaut)
  • Cantiano di Morelloaustera black cherries to taste for variegation

Take the white base, the cocoa and the sucrose and blend them well, then bring everything to 55 degrees, adding the dark chocolate chips and stir.
Once the ice cream is ready, make several layers of nice tufts of chocolate ice cream, variegating it with Cantiano cherries.
