Banana Split Recipe By Mattia

A banana-flavoured ice cream with a milk base covered with a hazelnut cream and dried banana slices as decoration.
Do you want to make an ice cream with a strong impact and great taste for your customers? I invite you to try my recipe for banana split by Mattia!
Ingredients:

  • 5500 grams of white base mix (to be requested privately) feel free to use yours but the recipe is optimized on my white base.
  • 150 grams of sucrose
  • 150 grams dextrose
  • 5 very ripe Chiquita or Dole bananas

Once the ice cream is finished:

  • Hazelnut covering such as Irka Nocciolata Ice or Mec3 Questa
  • Dried bananas sliced as embellishment

Blend all the ingredients until the sugars dissolve and stop only when there are no more pieces of banana pulp.
Mix and place in a bowl without tufts, smoothing the surface. Place in the blast chiller and once the first layer has hardened, add a layer of hazelnut cream and dried banana slices as embellishment. Then put it back in the blast chiller and wait for the hazelnut topping to solidify.
